| Greetings from the Dean | | | Our Legacy Continues As you know, Falk College’s history dates back to 1917. Over the past 100 years, changes have never hindered our mission to challenge, teach, and mentor the leaders and thinkers of the time. As we welcome the start of 2018, so we welcome the next century of history in the making. What will our legacy be? It will be our extraordinary people: our students, alumni, faculty, and staff of Falk College. And so, we watch with confidence as they meet the world’s opportunities and challenges with passion and skill; they will leave the world better than they found it, just as they always have. | | | Falk College Marks Child Nutrition Day with Food Demo, Tasting at Bernice M. Wright Lab School What do you get when you put a bell pepper and a carrot together with corn niblets, green beans, blueberries and eggplant? A rainbow. This multi-colored food kaleidoscope supports a deliberate effort known as “eating the rainbow” to help children make healthy food choices. In support of Child Nutrition Day, associate teaching professor and ACF chef Mary Kiernan, presented a mini food demonstration and tasting with children at the Bernice M. Wright Lab School. | | | Remembrance Scholar’s passion for medicine leads her to public health at Falk When Remembrance Scholar Kelsey Montondo was still very young, her grandfather was diagnosed with Parkinson’s disease, a nervous system disorder that affects motor skills. As a child, Klass went to school in inclusive classrooms. | | | Falk Food Studies, Clarkson Environmental Engineering researchers focus on livestock farms Despite a significant number of animals on smaller dairy farms in the northeastern United States, the vast majority of research on the benefits of anaerobic digester (AD) technologies only relates to larger livestock farms. That’s about to change. “Our work is ahead of this curve,” says food studies professor Rick Welsh, whose research efforts could lead to substantial environmental, economic, and health benefits.
